40g or 50g Purition - any flavour (we used Macadamia and Vanilla)
1 cup/100g Self Raising Flour
2 Eggs
2 cups/ 360g Full Fat Greek Yoghurt
1 Teaspoon Vanilla Extract
1 Teaspoon Bicarbonate of Soda


Whisk all ingredients in a large bowl and allow to sit for 15 minutes.
On a medium heat, melt a little butter or coconut oil in a non-stick frying pan and add blobs of pancake mix, ours were about 10-12cm across.
When the surface of the pancake starts to bubble, flip and cook through.

To serve:
The choice is yours… and possibilities endless! We like simple berries, a squeeze of lemon and a drizzle of honey or maple syrup –  a dollop of cream would be good too!
